After assuming operational control of the Robert C. Stack Jr. Dining Facility (DFAC) on Aug. 1, the 1st Stryker Brigade Combat Team, 4th Infantry Division, implemented a number of new initiatives to further build on the momentum generated by the 3rd Armored Brigade Combat Team. In an effort to strengthen readiness, the Soldiers of 1st SBCT saw an opportunity and took on the DFAC to create and promote healthier food options for Soldiers, committed to improving overall health.

"Our intent is to provide Soldiers with a healthy food option that includes all the essential nutrients and food groups they need to perform at an optimal level and complete whatever mission they have to do," said Sgt. Kevin Rios, DFAC manager, Forward Support Company, 299th Brigade Support Battalion, 1st SBCT.

Consistent with overall readiness, Soldiers must maintain adequate nutrition and hydration, and good dietary habits enhance Soldiers' ability to perform to their full potential.

"It all depends on you," said Capt. Michael Houston, commander of Company A, 4th Brigade Support Battalion, 1st SBCT. "To be an athlete you have to be disciplined in what goes into your body. The DFAC Stack has made it much easier to support the physical fitness of Soldiers in our formation."

The first change implemented at DFAC was the "Half Hour of Power," a 30-minute period after breakfast, lunch and dinner when Soldiers can eat a variety of healthy foods, including yogurt, pre-made wraps, salad and fresh fruit.

The 1st SBCT DFAC team also added a protein bar, which is available during all meals. Soldiers can choose from tuna, chicken, hummus, mixed nuts, hard-boiled eggs and guacamole.

Another hit was the infused water station where soldiers can add fresh vegetables or blended fruit to the water.

"We have to fill the bins at least five times a day because the soldiers can't get enough," Rios said.

The sandwich bar now has new items like fresh tomatoes, avocados, onions and banana peppers. "Our intent for this facility is to provide a people-friendly service where Soldiers 'want' to come and eat, not 'have to' come and eat," said Sgt. Melvin Jennings, Chief Warrant Officer, 2nd Battalion, 12th Infantry Regiment, 1st SBCT.

Focusing on providing a healthier option for Soldiers has proven to be a great tactic for the brigade. DFAC management received feedback from Soldiers, praising the healthy options and the amount of variety.

"I think it's good to know that you feed your soldiers and invest in their health. Being a vegetarian and knowing that DFAC broadens their dietary spectrum, I'm starting to feel more comfortable and at home at DFAC," said Spc. Joint Base Lewis-McChord, Wash. - Soldiers from the 16th Combat Aviation Brigade compete in the 51st Annual Philip A. Connelly Awards Program, a culinary competition to find the best diner in the.

The Soldiers, who work at the Raptor's Nest Dining Facility at Joint Base Lewis-McChord, were recognized by judges as the best at the facility and now compete against the best DFAC from Fort Huachuca, AZ.

"I have a lot of confidence in my Soldiers and I think we can win this competition," said Dining Facility Manager Staff Sgt. 1st Class Russell Slouffman. "These soldiers put in many hours to prepare for this competition." Slouffman went on to say that the contestants had been working 12 to 14 hours a day to prepare for the competition.

Don't Eat At The Dfac

The Philip A. Connelly Program is the department's premier culinary competition. It began in 1968 and is one of the few competitions where all components, active, Reserve and National Guard, compete against each other.

"Our greatest strengths are our excellent customer service and our professionalism," Slouffman said. "We have a lot of young Soldiers at our facility who are eager to perform, and we match them with our NCOs to teach them the proper procedures and techniques."

Competitors are judged by a system that awards points for things like sanitation, recipe tracking, food safety, good cooking techniques, kitchen design and hospitality.

For most of the Raptor DFAC Soldiers, this is their first time competing in this type of competition.

"I'm glad we were able to showcase our skills as a team," said Pfc. Jazmine Sagrero, JBLM's 16th Combat Aviation Brigade food service specialist. "This is the first time I've had a challenge like this, and I'm really excited to see how far we can go."

If the Soldiers win this round, they will move on to compete against the bottom four DFACs in the continental United States.
